About Chef Mark (M)
Passion for combining traditional techniques with global flavours
Originally from New Zealand, Chef Mark brings over 25 years of international culinary experience to M&D Catering. Trained in classical French and Italian cuisine, he blends traditional techniques with bold global flavours inspired by his travels.
Mark honed his skills in top kitchens across Auckland, Sydney, and New York before settling in London, where he played a key role in launching renowned restaurants like Temper, Balans Soho Society, Big Easy, and Nightcap.
His passion for flavour and innovation led to a successful Supperclub and catering venture, where his creative, personal approach won loyal clients. Whether it’s a wedding, corporate function, or private party, Mark crafts bespoke menus that deliver memorable, flavour-packed experiences.
About Chef Danny (D)
Bringing classical edge into the mainstream
Chef Danny is a highly skilled and versatile culinary professional with extensive experience in top-tier hotels, restaurants, and outside catering. With a career spanning over 25 years, Danny has worked at renowned establishments like Harvey Nichols 5th Floor, Jumeirah Beach Hotel in Dubai, Oxo Tower, and Rules Restaurant in Covent Garden. He also led the opening of several Big Easy restaurants, overseeing operations and menu development.
As previous Owner and Operator of Qualitee Caterers, Danny brings his expertise in large-scale event catering to clients across Kent. From intimate gatherings to large events, he ensures a personalised, high-quality dining experience. His knowledge extends beyond the kitchen; Danny has also spearheaded the training and development of kitchen teams, including implementing food quality improvements and managing high-volume operations.
Danny’s passion for innovation is matched by his commitment to excellence, making him the ideal choice for any event requiring top-notch catering, from corporate functions to weddings and everything in between.
